  YouCook talks with Chef Easton Hamilton

Before learning how to make Cajun Risotto Paella with La Maquette’s Chef Easton Hamilton, we were lucky enough to sit down and chat with him about the restaurant, his inspirations for dishes, and his likes and dislikes. Chef Hamilton grew up in St Thomas, Jamaica and immigrated to Canada in 1980. He was intrigued by his auntie’s cooking at 6 years old and has ever since taught himself with inspiration from skilled chefs. It shows in his passion for food and the creativity that he brings to his dishes.

Grabbing a seat in the first floor dining room, we could see why La Maquette was voted Most Romantic Restaurant in Toronto as well as Most Memorable Meal. Add to that the fact that even for large private events the meals are all cooked to order with no pre-set orders necessary, no wonder this place is popular for weddings and events! In the soft cozy glow of the restaurant (photos do not do this place justice) we could have talked for a lot longer but the paella was calling.

An intimate, candlelit ceremony

Last week YouCook visited La Maquette, voted one of the most romantic restaurants in Toronto, to make their featured Cajun Risotto Paella on the Winterlicious menu. “Risotto Paella?!” you ask? Yep that’s right and the Arborio rice adds just enough twist to the classic paella to make it special while fully satisfying your craving for seafood and rice. Chef Easton Hamilton took the time to show us how to make this dish …and we even got to eat it !!!

This establishment is well known throughout Toronto for many reasons. One of the few restaurants still self-described as fusion, La Maquette is inspired by French and Italian cuisine with a tendency towards Jamaican chef Easton Hamilton’s love of Caribbean influences. It was also dubbed the most romantic restaurant in Toronto in 2007. With that said, La Maquette is host to many wedding parties, as was occurring during my visit.

25 years young, La Maquette seems to be a quietly nestled French fashioned restaurant amidst the busy King Street East. A few doors down from the King Edward Hotel, La Maquette is a well-known hot spot for the culturally refined in Toronto. The two-tiered restaurant has the elegant Parisianla_maquette.jpg decor on the inside along with a highly coveted patio in downtown Toronto. Signature white linens, sparkling wine glasses, and white archways, all add to that soft and sleek French ambience.

A secret garden with beautiful climbing ivy flanks a wall fountain to look upon from the delightful sitting area. Amidst the serene wrought-iron French courtyard is a pink mock disco bomb shelter, with yellow brick-road, disco ball satellite and submarine style TV screen viewing the happenings in the bomb shelter. Camp and highly out of place, someone’s tongue-in-cheek humour became the playground for children attending the wedding event to romp around on.

la_maquette_3.jpgAlong with the theme of romance a long list of love-inspired cocktails gives way to the traditional elegant red wine. Kiss In The Dark, Aphrodite, French Kiss, Late Night Passion, Cheer Me Up!, Sail Away With Me, Lost In Your Eyes, My Sweetheart, French Connection, First Date, Love Potion #9, Perfect Gentleman – you could literally run the whole course of a relationship and then drown your sorrows in this cocktails list! I had the Aphrodite which had a bold and rich texture to it.

I took a trained European chef along with me for expertise and the both of us were heartily impressed with the risotto, even going so far as to say it was one of the best we have had. You have three choices of the risotto; vegetarian, a mixed seafood option or a cajun risotto, which should all come out piping hot and gently cascading as mine had. The entrees seemed to be the fusion options, such as the popular Miso marinated grilled scallops with room-temperaturela_maquette_5.jpg soba noodles drizzled with spicy pomegranate coulis, chive oil and baby bok choy.

La Maquette was pleasant enough, but with a new trend of authentic foods cooked exceptionally well and with the freshest of ingredients seen throughout Toronto’s culinary community, this restaurant felt a little outdated in what it had to offer.

A Toronto couple threw caution to the wind and planned a midnight ceremony in Toronto’s Sculpture Garden.

It was a dilemma Nataly Spudic and fiance Michael De Monte turned into a roaring success when they learned her favourite restaurant was booked on the date they wished to marry.

Nataly and Michael met in 2000 and began planning their wedding seven years later. Wanting to play on the number seven, they were delighted to learn the coming July 7th would be 07/07/07. What they didn’t count on when requesting to book La Maquette, was the tremendous popularity of the date for weddings due to it being considered a lucky number.

Discovering the seventh was already long booked, Nataly explored alternative options and learned the day prior was still available. Reworking her dream to fit her circumstances, she found she could still be married on the seventh, if she waited until midnight.

Planning backwards, Nataly embraced the idea of an end-of-day ceremony; aiming to create the same atmosphere as the emotional build up to New Year’s Eve. “It was a problem we turned into a big plus,” she says, remembering how she quickly fell in love with the rearranged day.

Moving the ceremony allowed Nataly to include more guests for the after-dinner festivities. As the second wave of guests arrived for ten o’clock, the party was infused with a fresh energy that lasted until three when the dancing wrapped up. From ten, time passed quickly and Nataly said it was only a few minutes to midnight when she and Michael moved outdoors to stand near the waterfall in the garden. Her niece and nephew guided guests with glowing lanterns from the restaurant terrance to surround the couple. The unconventional timing allowed Nataly to play with other aspects of the ceremony too. Rather than walking down the isle, she loved the idea of her guests moving in and creating a circle of support and warmth.

This was enhanced by her use of candles, an idea which grew from the late-night setting. Each guest was given one, unlit, to carry into the garden. The ceremony began with some beautiful words about the symbolism of lighting candles, which was followed by immediate family lighting their own candles and turning to light those held by neighbours, who then turned to light others’ candles. From Nataly and Michael’s perspective, it was a flame that rolled back, lighting faces and engulfing them in warm light.

The close of the ceremony brought an unexpected cheer from the sidewalk outside the garden where passersby had gathered, no doubt captivated by the beauty and romance of the scene before them.

Dining at its most romantic

Food has always been a crucial part of romance and restaurants like Toronto’s La Maquette prove that a perfect meal can be the most romantic detail of all.

La Maquette owner Ange Kanavas, 49, says it’s her mission to provide not only great food but an unforgettable dining experience as well.

“I always want my guests to have the ultimate experience. When you touch the five senses, you really touch someone’s soul. I want to reach out to people,” Kanavas said.

Opened in 1983 and taken over by Kanavas in 1993, La Maquette (111 King St. E) has long been one of Toronto’s best unkept secrets: Toronto diners voted it the city’s most romantic restaurant in 2007 and La Maquette frequently tops magazine surveys for quality of food, venue and service.

Though the restaurant has a distinctly French name (translation: “the model”) the food is geared towards healthy, delicious choices instead of classic heavy French sauces, with a broader turn towards Italian flavours as well. Think of it as French-lite, with butter replaced by olive oil and 90 per cent of the ingredients certified organic.

When she took over the restaurant in 1993, Kanavas had no idea what was in store and spent the early days walking out into the street to coax passersby into giving the restaurant a try.

“I invested my last $1000 in advertising and music and I gave myself three months to either make it or get out of the business completely,” she said.

Pulling off the right combination of food, ambiance and romance can be difficult and few restaurants manage to excel in everything the way La Maquette seems to so effortlessly, with a perfect mixture of candlelight, inspirational decor and beautiful food prepared to maximize the effect of subtle aromas.

Kanavas says her secret to achieving romantic perfection at La Maquette is energy, both physical and spiritual.

“If we can set the stage for the energy of the room then the couple doesn’t have to work hard to make it romantic. Fine dining is not just about eating — people are looking for something different,” Kanavas said.

Gorgeous orchids and stargazer lilies decorate the restaurant and the delicate sounds of piano and guitar music, performed live, fill the air during the evenings.

Kanavas meditates regularly to fill the restaurant with positive energy and she has strategically placed amethyst and other crystal geodes throughout the restaurant to channel the energy in the room and create
a calming effect.

For Valentine’s Day, the restaurant entertained a marriage proposal that ended with the entire dining room clapping.

“I was literally in tears — I am an incurable romantic at heart,” Kanavas said.

Kanavas says she never forgets the importance of happy customers.

“I want people to come out and feel good.”
